Pancake Dippers!!

Pancake dippers have been a HIT in my house and make breakfasts SUPER easy. I make these on random food prep days, cool and freeze them. Charly typically eats about 7 sticks dipped in organic syrup for breakfast. To this meal I always add fresh fruit like berries, mangos, strawberries, kiwi, apples etc and also a high quality fish oil. The stick molds I bought years ago on Amazon. You can get creative like the below gymnast or mickey mouse molds but honestly the “stick” concept is genius and creates a fun breakfast with very little complaining or waste 🙂

Ingredients:
2 ripe bananas
4 eggs
1 teaspoon vanilla extract
1-2 teaspoons sea salt
2 tablespoons honey
Pinch baking soda
1/2 cup gf oat flour
1/8 cup rice flour
1/8 cup corn flour

In your Kitchen-aid mix your bananas, eggs, vanilla, salt and honey until blended. Add your baking soda and flours a little at a time until the thickness resembles pancake batter. Put your stick molds onto a baking sheet and use a spatula spoon to fill the molds about 3/4 full. Bake for approximately 15 min at 350 degrees. Let the molds cool just a bit then pop out the sticks onto a large plate and let them cool completely before putting them in your ziplock and into the freezer. If you keep them on a plate on your counter they will last 2-3 days max. When you take them out on a breakfast morning microwave them for 45 seconds. I put Charly’s syrup into a dipping container and heat that up as well.
