This Cucumber Mint Salad can be made in under 10 minutes. We grew our mint in a little pot in our green house and it is already outgrowing the pot as it is a super easy herb to grow. Our dill wasn’t quite ready so we used dried. I baked wild Cod, put it on top of red leaf lettuce and had the salad on the side. Clean delicious dinner!
