Walnut Oil is “Amy Approved”!


Unrefined Walnut oil is super nutritious and it’s nutty flavor is a great way to dress up any salad, vegetable dish, or atop any cooked dish.  A few of the great health benefits include: rich in Omega-3 Fatty Acids, improves thinking, learning & memory, GREAT source of anti0xidants, vitamins & minerals, contains monounsaturated fats which helps to control blood sugar, rich in phytonutrients & are an excellent source of selenium, phosphorous, magnesium, zinc, iron & calcium!!!!

Here is a great salad dressing recipe compliments of Limerock Orchards in Paso Robles.

Walnut Champagne Vinaigrette
1 finely chopped garlic clove
2 T. Dijon mustard
1/4 c. champagne vinegar
2 T. lemon juice
2 T. honey
1/2 c. walnut oil
Salt & pepper to taste

Blend together garlic, mustard, vinegar, lemon juice & honey.  Slowly add walnut oil until dressing is emulsified.  Season with salt & pepper to taste.

Serve over butter leaf lettuce with candied walnuts, popped cranberries & a garnish of fresh sliced peach.

Walnut oil develops a bitter taste when exposed to heat, so it’s best on salads & added to other foods after cooking.  Use the oil within a 6-8 month period once opening, also store the oil in the fridge to help sustain the health benefits.

Eating 1.5 ounces of whole walnuts per day is also super great!!!
