Triathlete Going Raw…Creamy Chocolate Pie

My good friend Laura who is a multiple Kona iron-man finisher was having a ton of health problems and is using nutrition as her healing tool. She has implemented a whole foods based, plant-strong lifestyle that includes gluten free and focuses on the importance of micro-nutrients (vitamins/minerals) just as much as macro-nutrients (fat/carb/protein).

Creamy Chocolate Pie (GF, Vegan, & Raw)

Crust Ingredients:
– Brazil Nuts, Almonds, Cashews, Dates (maybe 4-6 (remove pits), Dried Figs (7ish), and a few drops of Vanilla (also ground flaxseed if desired, I added just a bit)

– Throw nuts into food processor, blend until chunky, add dates, figs, vanilla and blend until well mixed
– Press into pie pan

“Mousse” Ingredients:
– 3/4 to 1 whole banana, 1 small avo or (1/2 -3/4 large), tablespoon coconut oil (doesn’t need to be melted), high quality maple syrup, unsweetened Cocoa powder (or Cacao powder)

– Blend in Food Processor or Power Blender until creamy. If using food processor, likely will need to scrape down sides periodically.
– Pour on top of crust, spread evenly and chill in fridge for 2 hr for a more mouse-like pie or chill in freezer for a few hours for more of an ice cream consistency.
