Perfect Recovery Dinner: Chicken Brown Fried Rice

After a big workout or long run this meal will help you recover & fill you up!!

2 organic chicken breasts
1 cup organic brown rice
1 tsp unrefined coconut oil
1 onion, chopped
1 jalapeno, chopped
2 carrots, chopped
5 asparagus spears, chopped
1 portabella mushroom, chopped (or 6-7 chopped mushrooms)
1/2 cup frozen organic peas
Large handful kale
1 organic egg
Coconut amino’s or Bragg’s amino’s (as soy sauce)

Crack fresh pepper on chicken breasts and bake for 40 min at 400 degree’s. In meantime boil 2 cups of water & cook 1 cup brown rice for 40 min. While those are cooking chop all of your veggies. When chicken & rice are done add 1 tsp coconut oil to your wok. Saute onion & jalapeno for 2-3 minutes. Add carrots, asparagus, mushroom, peas, kale & stir. Add chopped up chicken & rice. Crack one egg onto the mixture & stir-fry for 2 minutes or so. Season with coconut amino’s & salt/pepper to taste. Serve hot!!

*You can make this a vegetarian meal by adding Tofu or just make it with veggies only. You can use whatever vegetables you have in your fridge. Explore & enjoy!!!
