Fish Tacos – 30 min dinner!!

Need a quick, healthy, easy dinner everyone will love??? Fish tacos are your answer!

Unthaw wild cod at lunch (or put in fridge before you leave for work). I used 2 pieces. When ready to start dinner preheat oven to 375. Bake cod with pepper, lemon pepper & fresh squeezed lemon for 30 minutes. While cooking, make your salsa, prep your spinach, get out tortillas (I used brown rice tortillas) and get your table set.

Salsa Ingredients
3 tomatoes
1/2 cucumber chopped thinly
1/2 jalapeño
1/2 cup cilantro chopped
1 small onion chopped
1/2 cup organic garbanzo beans
1 avocado
Squeeze of lemon
Salt & pepper to taste

Once fish is done break it up with a fork and squeeze fresh lemon on top. Pile fish, spinach and salsa on your brown rice tortilla and enjoy!!!
