Amy Approved Macaroons

This easy low calorie recipe only makes one batch so you are not up for hours baking.  Let me know what you think!

French Almond Macaroons
Serves 12

Ingredients:
½ cup whole unsalted raw almonds

3 egg whites

¼ tsp cream of tartar

¾ cup organic sugar

¼ – ½ cup or so of coconut

 

Instructions:
One: Preheat oven to 275 to 300F

Two: Process almonds in a food processor or vitamix for at least 30 seconds; set aside

Three: In a large bowl, whisk egg whites & cream of tartar at high speed w/ an electric mixer until stiff peaks form, about 5 minutes.  Add almonds, coconut and sugar and mix w/ a spatula until blended, about 30 sec

Four: Using a tablespoon place small mounds onto a baking stone or parchment lined baking sheet.  Bake for 15-18 minutes or until lightly browned and firm to the touch.  Let cool for 5 minutes before placing on a wire rack or wax paper.
