Quick Baked “Beans” / Lentils

Lentils are extremely nutrient dense (high in fiber, protein, iron & potassium just to name a few) and this sprouted version makes for a quick easy side dish!!! When anything is sprouted the bioavailability of the nutrients is extremely high. They also cook very fast (5 min). My family loves baked beans so this recipe is an Amy Approved version that they love!

1 bag sprouted lentils (Amazon, Sprouts, Whole Foods)
2 tablespoons Dijon mustard
1 tsp Garlic salt
1 tbsp Onion powder
1 tsp chile powder
1/8 ish cup honey
Sea salt (as desired)
Cook the lentils as indicated on bag. Add all ingredients, stir, and “merry” the flavors together by simmering for a few minutes. Serve warm. I paired this meal with a pork butt that I cooked in crock pot all day, roasted broccoli & cauliflower, lentils & sauerkraut.
