Split Pea Soup

Homemade split pea soup on a cold rainy day is amazing.  It warms you up from the inside out.  This recipe out of Clean Start is my favorite!

Creamy Split Pea Soup w/ Meyer Lemon Zest & Thyme

1 large onion, diced
5 stalks celery, diced
1 tbsp grapeseed oil
3 tbsps fresh thyme leaves
3 tbsps mirin (click photo to buy online)
Sea salt
3 cups green split peas
10 cups vegetable stock (I use 4 cups of broth out of carton then 6 cups water)
1 Meyer lemon (zest & juice)

In soup pot over medium heat, saute onion and celery in oil until soft (about 4 minutes).  Add thyme and mirin, season generously w/ salt & pepper and saute 2 minutes longer

Rinse split peas and add to pot w/ sauteed vegetables.  Add stock and bring to boil.  Reduce heat to simmer, cover and cook for 2 1/2 hours or until peas are soft and soup is thick.  Remove from heat, stir in lemon juice and season to taste w/ salt & pepper.  Top w/ lemon zest & serve.

*I add 2 baked organic chicken breasts to our soup.  I bake them for 35 minutes at 400 deg then shred them into the soup.
