Cashew Ranch Dressing

This is a staple in my house. Ben tops most of his food with it and I love it on my salads! It will last in the fridge for 2-3 weeks as the lemon, ACV and salt all help preserve it.

1 ish cup filtered water
2 cups raw cashews, soaked overnight
Juice of 1 lemon
2 tablespoons raw apple cider vinegar
2 cloves garlic
1 teaspoon onion powder
2 tablespoons sea salt
1/4 cup ish parsley (fresh or organic dried)
1/4 cup ish dill (fresh or organic dried)

Soak the cashews in water for a min of 4 hours. Into your Vita-mix blender toss in the water, cashews, lemon juice, acv, garlic, parsley, dill, onion powder and salt. Blend on high for 30 – 60 seconds until smooth and creamy.  Taste and add more seasonings as desired. Store in fridge in glass jar with lid.
