Pumpkin Energy Balls!!

Charly and her friend Avery asked to bake, I told them they had to create something that they could bring in their lunches this week and something that would give them energy for their sports! They used 100 bowls, measuring spoons and made a big mess but they were very proud and their energy balls are delicious!!! Awesome job girls!!!

Ingredients:
1 1/2 cups almond flour
1/4 cup protein powder (we LOVE Arbonne’s unflavored) (up to 35% off coupon – see below)
1/2 tsp pumpkin pie spice
1/4 tsp sea salt
2/3 cup peanut butter (you can sub any nut butter)
4 tbsp pumpkin puree
1/3 cup maple syrup
1/2 tsp vanilla extract
1/4 cup df mini chocolate chips

Combine the dry ingredients in a small bowl and set aside. In your mixer combine the wet ingredients and blend well. Slowly add the dry ingredients and mix thoroughly. Roll balls of dough into pumpkin shapes and place onto a platter covered with parchment paper. Roll balls in coconut sugar (pictured below you will see half rolled in white sugar and half in coconut sugar (compromise :)), place back onto platter and refrigerate for 30 minutes. Once firm use a butter knife to slice small “pumpkin like” cuts around the energy ball then use the mini chocolate chips to decorate them. Store in refrigerator in a sealed glass container. Cheers to fall, ENJOY!
