Cucumber Salad

I made this Cucumber Salad two nights ago and was really excited when the dressing turned out so good.  Instead of chopping all of the herbs I just blended them.

Cucumber Salad
2 cucumbers chopped
1 green onion or 1/2 white onion chopped
3 celery stalks chopped

Dressing (fresh herbs are always best but dried will work too)
Handful of mint
Handful of lemon basil (regular basil is fine)
2 tbsps or so of dill
Juice of 1 lemon
2 tbsps ACV (raw apple cider vinegar)
1 tbsps blackberry vinegar (or whatever flavored vinegar you have)
Salt/Pepper as needed

Chop the ingredients and place in bowl.  Blend the dressing ingredients together, pour over salad, mix and refrigerate for a half hour or so.

*SUPER low in calories (1/2 cup chopped only contains 8 calories!)
*Great source of Vitamin C, Vitamin K & Potassium
*Good source of Vitamin A, Magnesium, Phosphorus & Manganese
*Buy your cucumbers organic if possible as the non-organic versions have a very waxy substance on the skin
