Clean Dinner

Here is a new dinner idea to start off the new year. We sautéed the seafood medley (shrimp, calamari & scallops), made a big green salad with homemade dressing (soooo easy!) & made my baked broccoli recipe. YUM!

Seafood Sauté
1 bag frozen raw seafood medley (Trader Joe’s – shrimp, calamari & scallops)
2 tbsp raw grass fed cows butter
5-6 garlic cloves
1/2 large red onion
Juice of 1 lemon
Salt / Pepper

Soak seafood in a bowl of hot water for 10 min. Sauté chopped garlic & onion in the butter for 4-5 minutes. Drain seafood & toss into pan. Sauté until tender (8 min or so). Season with salt, pepper & fresh lemon. Serve hot.

Easy Salad Dressing
Juice of 1 lemon
2-3 capfuls apple cider vinegar
3 tbsps balsamic vinegar
1 tbsp local raw honey
2 tsps mustard powder (optional)
1 tsp salt

Cut up whatever veggies you enjoy in your salad. In separate small bowl whisk together dressing ingredients, pour over salad & serve immediately.
