Butternut Squash soup 😋

I had 6 squash sitting on my counter so I FINALLY roasted them up and made a creamy delicious soup we can eat on over the weekend 🎄❤️.

2 large butternut squash
4 delicata squash
2 tablespoons olive oil
6 cloves garlic
2 teaspoons sea salt
1 tablespoon maple syrup
1 teaspoon nutmeg
1 teaspoon pepper
1.5 cups organic chicken or vegetable broth

Cut the squash in half, coat with olive oil (paper towel) & roast at 375 until tender (about 30 min). Toss the garlic on the pan for the last 10 min of roasting. Once the squash is semi cool, scoop the flesh into your Vitamix or blender. Add the garlic and remainder of the ingredients and blend until super creamy 😋. Heat on the stove and store the leftovers in a glass container in fridge.
