Bison Tacos – recipe!


1lb bison (I buy mine at Costco)

1 onion

Lots of garlic

1 red or yellow bell pepper

Frozen spinach

Frozen fresh roasted corn

Dried cilantro

Dried parsley

Salt / pepper

Romaine lettuce

Organic corn tortillas

Guacamole (I found a premade one at Costco & trader joes that I approve of)

1 tomato

Avocado (if you don’t have guacamole)

Coconut oil

Brown a chopped onion & garlic in coconut oil for 3-4 minutes.  Add salt & pepper.  Add in Bison & brown always adding in more salt / pepper.  Add chopped pepper, frozen spinach (easy way to sneak in GREENS) & frozen roasted corn.  Simmer and add in dried cilantro, parsley & more salt / pepper.  Put a lid on a simmer.  Meanwhile put coconut oil on your skillet & warm your tortillas slowly.  Wash & get your lettuce ready for lettuce wraps.  Chop your tomato and open up or prepare your guacamole.  Build your tacos on tortillas or lettuce boats & ENJOY!
