YUM!  Is all I have to say.  For those of you who have the Clean Start cookbook this recipe is on pg 50.  I modified it a bit and it turned out too good…Danger!

Banana Date Cake
Wet Ingredients
10 dried dates, pitted
2 ripe bananas
1/3 cup brown rice syrup
1/4 cup coconut oil, melted
2 tbsps lemon juice

Dry Ingredients
1 cup brown rice flour
1 cup almond meal / flour
1/4 cup coconut flour
1 tbsps baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp sea salt

Preheat oven to 350 degrees & lightly grease 8×8″ glass baking dish (I used a pie dish)

Place dates in large bowl and cover w/ boiling water to soften.  Drain well, add bananas & mash both together so that chunks remain.  Add brown rice syrup, melted oil, lemon juice & whisk to combine.

In separate bowl, whisk together all dry ingredients.  Add to bowl w/ banana mixture & fold gently to combine, making sure not to over-mix.  Pour into prepared baking dish & bake for 30 min.  Remove from oven & cool completely before slicing or removing from dish.
