Old Fashioned Oatmeal Pancakes

These pancakes are a favorite in my house!!! I typically make enough for the week as they heat back up great! I was given this recipe from a friend and I made it GF DF so I could eat them as well. Ben and Charly both gobble them up!!!

Ingredients:
2 cups GF sprouted oats
2 cups nut milk of your choice (I use my homemade cashew milk) or buttermilk
2 eggs lightly beaten
1/2 cup vegan ghee or grass fed butter
1/2 cup oat flour
1/8 cup almond flour (optional – only if thickening is needed)
2 tablespoons coconut sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt

Start the night before by combining the oats and nut milk in a bowl and stir well. The next morning pour the extra liquid out of the oats. In your mixer lightly beat the eggs then add the oats, vanilla, butter, sugar, salt and mix well. Add the dry ingredients and mix to the consistency of pancake batter. Preheat your griddle with medium high heat and generously coat with avocado oil. Pour the pancake batter onto the grill and let them cook until golden brown. Serve warm!!!
