Charly and I planted fresh herbs in our garden tins and the mint has taken off! We were determined to use the fresh mint so we found this brownie recipe, added two handfuls of fresh mint and they were a 10!!! I realize this looks like mint pie but I couldn’t find my brownie pan so round it is!! I hope you enjoy this recipe as much as we did!!
Ingredients:
11 dates, pits removed
3/4 cup almond butter
1/4 cup coconut oil, soft at room temp
1/2 cup nut butter milk
1/2 cup oat flour
1/3 cup unsweetened cocoa powder
2 handfuls fresh mint, minced
1 1/2 tsp baking soda
1 tsp vanilla extract
2 tablespoons maple syrup
1/2 tsp fine sea salt
1/4 cup dairy free chocolate chips
Preheat oven to 350. Pit the dates and pulse them in a food processor for a good 10 seconds. Place them into your Vitamix / blender, add wet and then dry ingredients and blend until creamy. Use a spatula to pour into an 8×8 baking pan. Bake for 25 – 35 min. We pulled ours at 25 min and they were very moist, cooked until desired consistency.
Enjoy!!
