I recently listened to a fabulous podcast: Mayo Clinic Cancer Doctor: 5 foods that heal the body, starve cancer and prevent disease”. The number one food was purple sweet potatoes! This power house vegetable is full of fiber (6g per 1 cup!!), Vitamin A, Vitamin C, Potassium, Manganese, B vitamins & its unique benefits include:
1. Anthocyanins (purple pigment): these are potent antioxidants also found in foods like blueberries but purple sweet potatoes have a much higher content.
2. Lower glycemic impact than white potatoes, supporting better blood sugar regulation.
3. Prebiotic fiber which supports beneficial gut bacteria.
I was determined to find them (Whole Foods) and explore ways that my family would eat them. I am happy baking a few up for the week and chopping them into my salads, making a sweet potato burrito bowl or just eating a few slices on the side of my meal. For Ben I found he loves them if I make them into mashed potatoes. Chop (skin on), boil, drain, , add coconut oil, salt / pepper, and use a potato masher to mash until desired consistency. For Charly I found that she will eat them if I cut into French fry wedges, toss with olive oil, sea salt & bake until crispy brown. She loves them dipped in ketchup!
Take the time to listen to the above podcast, buy them at Whole Foods and find how everyone in your family likes them and share with me!
