Magic Cookies!!!

This recipe is from one of my favorite cookbooks “Plant Over Processed” by Andrea Hannemann. My whole family loves these cookies and they are super easy as they are whipped up in my blender 🙂

Ingredients:
1 can organic chickpeas, drained & rinsed
1/2 cup natural peanut butter
1/3 cup organic maple syrup
2 teaspoons pure vanilla extract
1/2 teaspoon baking soda
Pinch sea salt
1/4 – 1/2 cup vegan chocolate chips

Preheat oven to 350. Optional to line your baking sheet with parchment paper (I use a stone and do not line it). In a high-powered blender, blend the chickpeas, peanut butter, maple syrup, vanilla extract, baking soda, and salt together until smooth, about 1 minute. Pulse in the chocolate chips (option to “fold” them in with a spatula). Put spoonfuls of the dough onto the baking sheet. Bake for 20 minutes, until golden brown. Enjoy!!!
